Peanut and Marmite oat cookies

Porridge, peanut butter and Marmite. These are all good options for breakfast, and it turns out they taste amazing when you put them together in cookie form! This recipe should make about 16-20 cookies.

Ingredients

  • 1 cup of peanuts
  • 2 cups of quick oats or equivalent (microwaveable rolled oats/oatmeal)
  • 2 cups of water
  • 1 Tbsp of canola oil
  • 1 tsp of salt
  • 1 heaped Tbsp of Marmite

Method

  1. Preheat a fan forced oven to 180 degrees Celcius
  2. Put the oats in a large bowl and add the water, oil and salt.
  3. Microwave as per the directions (I use home brand quick oats and 2 cups takes 4 minutes)
  4. Chop up the peanuts until the pieces are about 2mm wide (feel free to cheat and use a food processor, or stand there swearing for 10 minutes as you send peanut fragments flying every time you chop)
  5. Take the oats out of the microwave - the resulting porridge should be thick and sticky
  6. Add the peanuts to the porridge and stir to combine
  7. Add the Marmite and stir thoroughly to combine (use a bit of elbow grease, or else you'll end up with chunks of plain porridge in the middle)
  8. Using a dessert spoon, take a heaped spoonful of the mix and roll into a ball in your hands. It'll be sticky at first but will dry as the steam comes off
  9. Place each ball onto a baking tray and squash down into cookie shape
  10. Once you've formed all the cookies, place the tray in the oven for 10 minutes
  11. When the cookies are done, take them out and let them cool on the tray
